Vegan Tuna Sandwich: CBD Infused!

Ingredients:

Highlights: Easy  – Fresh – Healthy – Vegan – Gluten-free – Protein Packed – Creamy – Crunchy –Tangy – CBD infused – Delicious

  • 2 sandwich buns or 4 slices of bread
  • 1 drained can of chickpeas
  • ½ shot of apple cider vinegar
  • 1 onion (diced)
  • Sliced cucumber
  • 10% CBD drops

Seasoning:

  • 4 tbsp vegan mayo
  • Salt/Pepper
  • 1 tbsp basil

Prep Time: 15 minutes
Serves: 1-2 people

Can be stored in your fridge for up to 2-3 days

I am obsessed with this vegan tuna sandwich! It is so easy and fresh.

Where I live, in the Netherlands, it has been very cold for the past month with below-freezing temperatures. It was the coldest it’s been in over 20 years here!

That being said, I have been living off soup and warm dishes in attempt to survive the cold weather…

Now, rather suddenly, the weather is clearing up and we are now experiencing a beautiful +20°C on good days! What a change!

This switch from cold to warm has me craving to eat more fresh and raw tasting foods, hence why I have pulled out this recipe from my archives! 

Ingredients CBD Tuna sandwich

As I said, this is an extremely easy recipe to make.

You can start by draining and rinsing your tin/jar of chickpeas and either smash them up with a fork or you can pulse them in a blender/processor.

Be careful not to over-pulse as you want there to be a tuna texture rather than a Hummus Texture!

From here you can cut up your onion into tiny pieces and fold them into your mashed-up chickpeas in a bowl.

Go ahead and add in your vegan mayo, basil, salt, and pepper as well!

You can also add in your ½ shot of apple cider vinegar here, too.

This is one step I notice a lot of other vegan tuna recipes skip:

Adding Apple cider vinegar not only adds a probiotic to your dish, but it also adds that fishy flavour you might be missing with other vegan tuna recipes!

It may sound weird adding apple cider vinegar, but just trust me on this one!

Lightly toast your gluten-free buns/bread in the oven. You don’t have to toast them or use gluten-free bread, of course! Do YOU.
 
Whilst those are toasting, you can cut up your cucumber.
 
Apply another thin layer of vegan mayo to each bun and pile on your vegan tuna.
Before adding your cucumber, it is time to add your CBDI used 5 drops of 10% CBD per sandwich. I always use GreenCuisine CBD’s Isolate drops as they are 100% organic and a source of pure, tasteless CBD extract.
 
You can use whatever strength drops as well, as whatever number of drops you please!

Once your CBD drops are on your vegan tuna, add your cucumbers!

You can also add fresh spinach, kale, or other leafy greens to spice it up a bit.

I usually do, however, I just didn’t have any fresh greens in my kitchen that day!
